- Menu items reviewed. Simple prep conducted on site.
- Temperature Control: Monitoring is required to be conducted. Accurate temperature gauge is to be kept securely fastened inside upright refrigeration unit. Refrigeration is to be maintained at or below 4 C. Freezers are to be maintained at or below -18 C.
- Mechanical Dishwasher: Not tested this date. Sanitizer cycle noted and required to be utilized at all times.
- Manual Dishwashing: 4 Step Method. Signage provided. Ensure all food contact surfaces are washed and sanitized after use. Bleach is to be kept on site. Currently locked away.

- Food Storage: Ensure all food ingredients are stored in covered, food grade containers. Cooked food items are to be stored above raw food items. Best before/expiration dates are required to be monitored. (ie: First In - First Out)
