Observation: General cleanliness in facility is not satisfactory.
Corrective Action(s): a very thorough deep cleaning is required. be sure to dress the following at minimum:
- Underneath, around and inbetween all cooking equipment to remove buid up of grease and food debris
- wipe down all walls with a degrease. follow-up with sanitizer
- all coolers to be wiped down, inside & outside. Be sure to pay special attention to seals of each door
- all counters, shelves, storage areas, etc to be wiped down with a degrease. follow-up with a sanitizer.
- very thorough cleaning/mop of floors. be sure to use a degreaser
- cleaning of exterior of dishwasher
- dishwashing pit requires cleaning and organizing. be sure to clean and sanitize all stoarge bins for clean utensils/equipment
- clean and sanitize ice machine
- clean all sinks
