Observation (CORRECTED DURING INSPECTION): Dishes were not being properly sanitized, as the dishwasher was not reaching 71C at the plate surface (82C on the dishwasher's temperature gauge) during its rinse cycle.
Corrective Action(s): All dishes must be washed in the dishwasher, then manually sanitized with 100 ppm - 200 ppm bleach solution in the sink. All food served to customers in single-use/disposable containers. Only dishes used to prepare food are washed onsite for re-use.
**Two-compartment sink was filled with 200 ppm bleach solution at time of inspection. Ensure to change this solution after each load of dishes is done.

Comments

- Hand washing sink was properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 200 ppm. Wiping cloth was stored in sanitizer solution in between uses - good.
- Prep cooler and glass-door cooler were measured at 4C or colder
- Upright freezer and chest freezer were measured at -18C or colder
- No hot-holding at time of inspection (rice was being cooked).
- Food storage practices satisfactory. Good separation of raw and ready-to-eat food items. All food stored covered and off the floor.
- Dry storage areas were satisfactory.
- Equipment maintained in sanitary conditions. General sanitation was satisfactory.
- No signs of pest activity noted at time of inspection
- Foodsafe-certified food handlers on-site at time of inspection.
**Reminder to keep daily temperature logs including temperatures of all coolers and freezers, cooked food temperatures, hot-holding temperatures, cooling times and temperatures, etc. Also include the temperature of the dishwasher rinse cycle.
