Observation:
- Two handsinks in the kitchen not operational. One has only cold water available with liquid soap and single use paper towel. Other handsink as both both faucets not functional and liquid soap & paper towel available.
Corrective Action(s):
- Operator mentioned that the parts are ordered and they will be arriving soon. The internal knob teeth is worn out and is not allowing rotation due to this as per the operator. Operator proposed to use the 2 compartment sink for handwashing meanwhile - equipped with single use paper towel in a dispenser. Ensure to place a handsoap by the sink. Operator to contact the inspector once the faucets are repaired. Ensure faucets are functional by July 4, 2022.

- Front door was open.

Observation:
- Dust build-up observed on ceiling vent and shelving racks inside the kitchen.
- Upstairs staff washroom not in sanitary condition.
- Stairs leading to upstairs storage room and storage room floor (expecially hard-to-reach areas) not in sanitary condition.
- Mop sink area not in sanitary condition.
- Food debris observed underneath & behind stoves, underneath 2 compartment sink.
Corrective Action(s):
- Ensure areas noted above are cleaned.

Comments

Washroom handsinks and the front area handsink are fully equipped.
All coolers at 4C or below.
Freezers (upstairs) at -14C to -26C.
QUAT sanitizer in use measured at 200ppm (front & back).
High temperature dishwasher reached 71C or above during the final rinse.
Hot held soup at 60C or above.
Hollandaise sauce at 40C - operator stated the recipe has not been changed. This sauce was previously approved for holding under 60C after lab test verification of its pH being under 4.1. The pH test paper indicated pH between 4.0 and 4.5 at the time of inspection.
Cook top ventilation unit in sanitary condition.
Pest monitoring done by Atlas Pest Control - last report from 2022 February indicates no notable activity inside the premises.
No obvious signs of pest activity observed at the time of inspection.

Ensure to address the handsink issue. If handsink knob is wearing out frequently, consider changing the sink/faucet model so this issue does not reoccur. Failure to have sinks repaired by the next follow up inspection date may result in the issuance of violation ticket(s) and/or Order(s).
