-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Thermometers available for temperature monitoring. Ensure to have the temperature logs up to date.
-General food storage practice excellent throughout. Ice machine in sanitary condition.
-200ppm chlorine solution is available in labelled spray bottles and buckets to hold wiping cloths throughout. Good.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-No evidence of pest activity observed.

NOTE: Ventilation canopy hood overdue for professional cleaning. Ensure to contact for service.
NOTE: When in use, ensure the ice machine scoop is stored on a sanitized surface (i.e. container/holder) rather than directly on the machine.
