Food debris in/on the prep.coolers (Example: under the lid) and walk-in cooler (behind the glass door) ;
Corrective Action(s): Please, clean and sanitize all items;
Note: Please, follow the schedule of regular cleaning;

General sanitation is acceptable but requires attention in several areas.

Walk-in cooler at 4.0 C (the thermometer - available);
Freezers - satisfactory (clean);
Food storage - satisfactory;
Hot Holding Units > 60.0 C (from 68.0 C to 78.0 C);
Line coolers and cooler front of the prep. coolers < = 4.0 C;
Note: Prep.line cooler - water is dripping (a plastic container with water in the cooler) - a service is recommended;
Knives are stored safely at the time of inspection.
Sanitizer/Quat - available (spray at 200 ppm);
Bleach - available;
Hand sinks are stocked with liquid soap and paper towel;
Dishwasher at 50 ppm of Chlorine (good);
