Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Interior of the ice machine was filthy.)

Adequate handwashing stations not available for employees [s. 21(4)] (One of the handsinks in the kitchen (close to the ice machine) was blocked by a small desk. It appeared that staff were not using the handsink. )

Employee does not wash hands properly or at adequate frequency [s. 21(3)] (Observed staff washing hands with gloves on and not using liquid soap.)
Comments

The following corrections were observed during follow up inspection:
- The handsink in the kitchen was made accessible to staff and was equipped with hot & cold running water, liquid soap and paper towel
- The interior of the ice machine has been cleaned
- The food storage in the walk-in cooler was appropriate and prevented cross-contamination between raw meats and produce
- Cardboard boxes that were used to line the shelves in the walk-in cooler were removed. The staff inquired if they could use plastic lining to line the shelves. Approval is given upon a condition: linings shall be replaced if they are filthy or are unable to cleaned and sanitized.
- The screened net that was hanging, which had holes and were not appropriate to prevent pest entry, at the back door was removed and the back door was kept closed during operation. The inspector observed a small gap at the bottom of the door. The gap is to be sealed.
- 100ppm chlorine sanitizers were present at multiple locations. All sanitizer bottles were labelled.
