**Make sure to follow wash rinse and sanitize steps (in that order) when using the sinks for dish washing. Be careful with the spray addition of full strength bleach on dishes. Make sure to rinse only after contact time is completed. Also, try to use the test strips to verify chlorine strength. Cooling units less than 4 C. hot holding above 60 C. Handwashing OK - make sure not to use wash cloths for drying hands, only use paper towels.
