Observation (CORRECTED DURING INSPECTION): Food in main prep line cooler was measured at an average temperature of 9 - 12 C (bottom/top of cooler, respectively).
Corrective Action(s): All food moved to other, working coolers. Ensure cold potentially hazardous foods are always stored at 4 C or colder.

Observation (CORRECTED DURING INSPECTION): [Repeat violation]: Re-used disposable clear takeout containers in clean dish storage area were observed to be contaminated with stuck-on food and dishwater residue. This has been discussed at past inspections.
Corrective Action(s): Discarded. Do not re-use disposable plastic containers. Obtain suitable reusable containers that are easily cleanable, and designed for food use. This is a final warning on this issue.

Observation (CORRECTED DURING INSPECTION): See violation [302]: disposable plastic takeout containers were again found in dirty condition in clean storage. These are not suitable for reuse.
Corrective Action(s): Switch to food containers designed for reuse immediately.

Observation (CORRECTED DURING INSPECTION): Prep line cooler is not maintaining food at 4 C or colder (average temperature 9-12 C).
Corrective Action(s): Have unit serviced and operating at 4 C or colder by 3rd August 2017. Call for reinspection once fixed. Do not place any perishable foods back into this cooler until reinspected by a health officer.

*General sanitation satisfactory. No evidence of pest issues observed during inspection.
*All other cooler and freezer temperatures satisfactory (see violations section).
*Quat sanitizer available at approximately 200ppm.
*High-temperature dishwasher provided a sanitizing rinse cycle of 71 C at the plate level.
*Organization of raw and ready-to-eat foods satisfactory.
*Note: discussed temperature checks for cooked chicken with staff. Staff were not aware of proper cooking temperatures for chicken, and could not locate a probe thermometer on site. Probe thermometer must be made available (or purchased) by tomorrow. Ensure temperature checks are conducted on each batch of chicken - internal temperature must reach 74 C.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Tools and utensils generally maintained in clean condition.
