Observation (CORRECTED DURING INSPECTION): BBQ pork, soy sauce chicken, and BBQ chicken stored in the sliding hot case had an internal temperature of 43C to 50C. Improper hot holding of temperature for bbq products in the sliding case has been noted on previous inspections. Staff are aware of the hot holding parameters of 60C, but remains to keep the sliding case partially open. Temperature logs for the cook time and temperature of food products were provided.
Repackaged bbq food products in the open hot case were between 45C to 50C.
The following must be done:
- BBQ products must be kept at less 60C internally as per current food safety plan. if food products are displayed less than 60C internally for longer than 2 hours, it must be discarded. Accurate time and temperature logs need to be maintained.
- health approval needs to be granted if facility wishes to display food product less than 60C internally for 4 hours or less.

Observation: Small amount of rodent droppings were in the dry storage area behind the rice bins. Dropping were removed and area was disinfected at the time of inspection. Reviewed pest reports in the hot foods area dated Jan 26, 24, & 29, 2018. Pest report indicated that no rodent activity was noted. Facility is to contact the pest control company and notify them of the problem.

200ppm quats available for use in containers. Wiping cloths stored in solution when not in use.
