Observation: Found small amount of mice droppings through out the premise (under storage shelves and between equipment).
Corrective Action(s): Today/ongoing. Well clean and sanitize the floor (especially hard to reach areas) and storage shelves.
Pest provider must be notified.

Observation: Some floor-wall junctions off walls; observed cracks & gaps.

Comments

Overall general sanitation is satisfactory. (However, required some improvement/see violation sections).
Walk-in cooler below 4 C.
Walk-in freezer at -18 C.
Mostly foods stored off the floor (Note: Boxes of pineapple stored directly on the floor in the walk-in cooler - no empty tray/pallet under - it is not the best practice. Some mess in the walk-in freezer on the floor.).
Food covered in food grade containers at the time of inspection.
Thermometers for cold units - available.

Note: Observed accumulation of ice,food, and debris on the floor of the walk-in freezer under a storage shelf (was leak from condenser line) - defrost the walk-in freezer, clean well, and organize.

Dry Storage: Foods stored in pest-proof, food grade containers; off the floor; & organized
Equipment and Utensils are clean, dry, and free of residue.
Single use service items are kept covered and protected on dry storage shelves, off floor.
Hand washing sink supplied with liquid soap and paper towel.
Surface sanitizer Quat at 200ppm in a spray bottle.
Staff washroom is clean and adequately supplied.
