Routine inspection is conducted:
- All hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Food contact surface sanitizer solution available at 100 ppm chlorine solution in spray bottles
- High-temperature dishwasher reached 77C at the dish surface during rinse cycle
- Coolers were measured at 4C or colder. Freezer temperatures satisfactory.
- All hot-held foods were held at 60C or hotter. Food items are time tracked and small portions are stored in hot holding unit that are used within two hours.
- Reviewed proper cooling procedures: Ensure to cool all hot foods from 60C to 20C within 2 hours, then from 20C to 4C within the next 4 hours in the cooler.
- Accurate thermometers available. Temperature logs well maintained and up to date.
- No signs of pest activity noted at time of inspection
- Foodsafe certified staff on-site.
- General sanitation satisfactory
