Observation (CORRECTED DURING INSPECTION): Bar area is missing food contact surface sanitizer.
Dirty wiping cloths are stored on counter tops and prep tables in kitchen
Dirty knives stored in a metal can on prep table
Corrective Action(s): - Quats sanitizer solution in buckets is made available in bar area and concentration is measured at 200ppm
- Store all wiping cloth in bucket with sanitizer solution with concentration maintained at 200ppm quats solution
- Wash and sanitize all knives after every use

Observation (CORRECTED DURING INSPECTION): - Handsink in front of dishwashing area is completely blocked with boxes and other items stored
- Hot water was turned off and hot water was not available at the handsink near two compartment sink
Corrective Action(s): - Remove all items from front of the handsink and ensure that all handsinks are easily accessible and available for handwashing
- Hot water was turned on and hot water was available at handsinks (temperature was measured at 42C at the end of the inspection)

Observation: - Several food items were left uncovered in prep coolers, walk-in cooler, dry storage area and undercounter storage of dry goods
- Bulk bins were not covered
- Single use bowls used as scoops in bulk bins
- Ice scoop left on top of ice machine in unsanitary manner
- Food items are stored on floor in walk-in cooler and walk-in freezer
- Lychee fruit in open metal can stored in cooler
- Pop gun stored in ice bin
Corrective Action(s): - Keep all food items well covered and protected from contamination. Provide well fitting lids or cover using plastic wrap.
- Donot use single use cups as scoops. Use scoops with handles and store handle in a way that the handle does not come in contact with food.
- Store all food items off the floor
- Do not store food in metal cans once opened. Transfer the content of can to a food grade container
- Store pop gun in the holder and ensure that the ice stored is protected from contamination
- Store ice scoop in a container on top of the ice machine
