Observation (CORRECTED DURING INSPECTION): Sanitizing pail is currently only reading 50 ppm at time of inspection.
Corrective Action(s): Sanitizing pail was replaced with a fresh solution of QUATS and was measured at 200 ppm.

Observation (CORRECTED DURING INSPECTION): Repeat issue. Permit was not posted in a clearly visible location to the public.

304 - Premises not free of pests [s. 26(a)]
Observation: Recent mouse droppings were noted in the following areas:
- Along the edges of the dry storage hallway
- In the hot water tank area
- Underneath the left side of the 3-compartment sink, near the back wall
Corrective Action(s): Saturate droppings with 1 part bleach, 9 parts water solution. Let soak for approximately 15 minutes, then wipe up and dispose of in the garbage receptable. Continue monitoring for any signs of rodent activity, including droppings, fur marks, urine stains, or mice in traps.

Comments

Routine inspection conducted. Area is generally well-lit and in good sanitary condition. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Walk-in freezer at -20C
- Undercounter cooler at 3C (inside kitchen)
- Ice cream prep cooler (behind counter) at 3C
- Ice cream dispenser unit at 3C
- Undercounter freezer at -14C
- Ice cream cake compartmentalized freezer units at -18C or below
- Ice cream cake display freezer up front at -23C
- Hot-held items all above 60C
- Temperature logs up-to-date and well maintained
- Cooler units equipped with accurate thermometers

2. Hygiene and Sanitizing
- Hand wash stations in front-of-house and in kitchen stocked with hot/cold running water, liquid soap, and single-use paper towels
- QUATS hard surface sanitizer spray bottle up front at 200 ppm
- Ventilation canopy in excellent sanitary condition
- Ice machine in good sanitary condition, scoop was placed outside the machine in a clean container
- Three-compartment sink is available and ready for use for cleaning and sanitizing food contact surfaces. Dispenser releases approximately 200 ppm quats
- Washrooms (for customers) and staff washroom are well maintained and in good condition, hand sinks adequately stocked. NOTE: Female washroom sink faucet releases water at a slower rate, please address this issue by end of day today

3. Storage
- All food products stored at least 6" off the floor. NOTE: Please continue to remind dairy company to keep all dairy crates off the floor, or to have a blank crate at the bottom
- Food products are covered with a food-grade lid, or are in their original containers - good
- Chemical storage kept separate from food service area

4. Pest Control
- It is highly suggested that you continue acquiring the services of a professional pest control company
- Back door was tightly shut and a plastic door sweep was added to fill in the gap

5. Administrative
- Supervisor has FoodSafe 1 taken last year, but was unable to provide certificate. Please email the certificate to the Environmental Health Officer
