Observation (CORRECTED DURING INSPECTION): Wiping rag stored directly on pizza prep table.
Corrective Action(s): 100ppm sanitizing solution available. When wiping rags are not being used, they need to be store in the sanitizing solution to prevent cross contamination.

Observation: Time tracking system in place for holding cooked pizza products less than 60C for a maximum of 2 hours. However, records are inconsistent for dates being recorded.
Corrective Action(s): Ensure time tracking records for the cooked pizza products are accurately maintained in terms of the correct date and time.
