The following items have been repaired since previous inspection:
(1) Installation of Ice machine
(2) Relocation of oven
(3) Removal of tack boards from above food preparation areas.
(4) Stainless partitions between wash and rinse sinks leaks welded
(5) Some racks have been replaced in freezer unit
(6) 2 low sink plugs obtained for 2 compartment prep sink
(7) Holes observed in wall board (FRP) have been caulked
(8) Stainless steel Hook at spray faucet of three compartment sink.
(9) Removal of the 2 pieces of wood mounted to wall and backsplash at three compartment sink..

COMMENTS
- Facility in EXCELLENT sanitary condition - NO VIOLATIONS OBSERVED
- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 71 (76) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Test strips available for use
- Three compartment sink method in use and at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- Commonly used items (tongs, pizza cutters, etc.) washed in dishwasher every 2 hours or more as required - confirmed with staff
