Observation (CORRECTED DURING INSPECTION): Noted 4 bags of frozen chicken meat and 1 bag of frozen fish fillet in the back storage area being defrosted at room temp.
Corrective Action(s): The internal temperature of the frozen chicken was @ 1-4oC.
The internal temeperaure of the fish fillet was @ 6-10oC
The frozen chickens were moved back into a cooler.
The fish fillet was discarded during inspection
On going infraction. A correction order was issued. Do not thaw any frozen perishable food out at room temperature. Defrost in a cooler or under a cold running water.
