Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food such as dairy products were stored in walk-in coolers at an internal temperature between 7C to 12C.
Corrective Action(s): Ensure that all cold potentiall harazdous food are stored/displayed at 4C or below. Cold PHF stored in the walk-in cooler and recorded at an internal temperature above 4C for more than 2 hours was discarded during inspection. This includes 1 bucket of yogurt, 3 buckets of chick pea, 2 boxes of cheese (Premium Paneer, label stated to be refrigerated), 3 milk gallons, 1 crate of small badam milk bottles, 2 buckets of gravy.

Observation: 2 walk-in cooler were not working properly and were unable to maintain temperature of 4C or less.
1) Ambient temperature of walk-in cooler in main kitchen noted around 10C and second walk-in cooler in auxiliary kitchen noted at 8C.
2) The door of main kitchen walk-in cooler has multiple holes in it that can prevent in maintaining temperature below 4C.
Corrective Action(s): 1) Ensure that both walk-in coolers are repaired and able to maintain temperature of at least 4C.
TO BE CORRECTED BY - July 27, 2021.
2) Ensure that door can provide proper seal to maintain adequate air circulation within the cooler. Repair the door.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- See violation above.
- Auxiliary kitchen stand-up freezers (x2) between -4 to -9C.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer buckets available and the concentration of chlorine noted at 200ppm.
- 3 compartment dishwashing sink available for washing large utensils/dishes.
**Ensure that staff has knowledge of proper dishwashing steps - wash, rinse, sanitize and air dry.
- Hot temp mechanical dishwasher was able to reach 75C at the dish surface.
- Staff washroom was maintained in sanitary condition.
- Vent was maintained in good condition. Next service scheduled for Sept 2021.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Dry storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
