Observation (CORRECTED DURING INSPECTION): Labelled sanitizer spray bottle measured 400 ppm of QUATS. QUATS solution is dispensed from 3 compartment sink QUATS dispenser. Potable water rinse is required if >200 ppm QUATS.
Corrective Action(s): Dilute QUATS solution to 200 ppm manually in the meantime. If continuing using 400 ppm QUATS of food contact surface, then a potable water rinse is required. Service the QUATS dispenser or adjust.

Hot holding of hotdogs, chicken wings and tornados measured 63.6C to 69.8C
Under the counter coolers at <4C. Under the counter freezer at -18C
Condiment inserts at 4.9C
Ice cream chest freezer at -19C. Upright 2 door freezer at -22C to -25C
Milk and cream at beverage area is stored on ice. Measured at 3.4C
Retail self serve cooler measured at 3.4C
Walkin cooler at 0.7C. Walkin freezer at -22C

Temperature monitoring logs are maintained and available for review.
