Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Bleach sanitizer not available at start of inspection
**Corrected during inspection** Sanitizer mixed when requested. Measured 100ppm bleach.
Please have available whenever in operation. Ensure all staff know how to properly mix sanitizer solution.

2. High temperature dishwasher measured ~54.6°C after 4 cycles.
Correction: 2. Contact plumber/technician to have unit serviced. Dishwasher needs to reach 72°C at plate surface (81°C at nozzle). In meantime, facility is to switch to manual dishwashing method. Three compartment sink is to be used for the following:
- Wash: with soap
- Rinse: with clean, potable water
- Sanitize: use 100-200ppm bleach sanitizer solution (1/2 tsp household unscented bleach : 1L water). Soak equipment for 30 seconds and let air dry.

Follow-up inspection conducted.

High temperature dishwasher measured 79.5°C on first cycle.
Bleach in spray bottle measured ~100ppm chlorine.

All critical violations from previous inspection corrected.

Operator stated they are looking into reorganizing workspace to streamline production. Please provide a revised floor plan of facility to your district inspector for approval before making any changes.
Droppings still observed at time of inspection; Please work with pest control company to eliminate pest issue in facility.
