Observation (CORRECTED DURING INSPECTION): Apple pie/sheet cake was stored in a rolling rack for unknown time period. Once pie was disturbed a large quantity of fruit flies came up from pie. Pie was covered in fruit flies as pie was not protected from flies.
CORRECTED DURING INSPECTION - item discarded.

Observation (CORRECTED DURING INSPECTION): Cheesecake from earlier today left out at room temperature to cool. Night staff left cheesecake out at room temperature to cool. CORRECTED DURING INSPECTION - items moved to cooler unit.

Corrective Action(s): DO NOT leave potentially hazardous food items out at room temperature for indefinite periods of time to cool without instruction to day staff.
Potentially hazardous food items are to be cooled from 60 degrees Celsius to 20 degrees Celsius in 2 hours and 20 degrees Celsius to 4 degrees Celsius in 4 hours.

Observation: Many fruit flies found at facility
Rodent droppings found throughout facility.
According to staff Pest Technician serviced facility recently and found no evidence of pests.
Health inspector has found evidence of pests in the following places today:
- Rodent droppings throughout - especially in storage areas
- Bag had hole with chew marks in stairwell
- Bun on floor had chew marks in stairwell
- Fruit flies covering food items left out during the day
- Flies coming up from mop sink area cracks

Corrective Action(s): Pest technician needs to revisit site. Additional traps must be added.

Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.
Inspect all bagged food items for signs of chew marks and discard bags of contaminated food items.
