Observation: Dead rodent was found in a tin cat. Facility is currently serviced by a pest control operator, but no reports available on-site for review.
Corrective Action(s): Have pest control service/visit facility and ensure there is no further pest issues in the facility. Pest control reports are to be stored on site for review - do not take pest control records home.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Mould growth was found on the on the shelving units in the walk-in cooler.
2) Rodent droppings were found in the washroom by the water tank.
Corrective Action(s): 1) Ensure shelving units are properly cleaned and sanitized on a regular basis to prevent mould growth and potential contamination of foods.

2) Clean and sanitize all areas affected by rodent droppings using a bleach sanitizing solution. After sanitizing surface, wipe away droppings with a paper towel and single use gloves.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Right door for the prep cooler (top portion) is broke and requires repairs. It is currently being held with a piece of string.
Corrective Action(s): Repair door and ensure it is in good operating condition. Broken door will also result in potential increased temperatures, as the door does not form a good seal.
Correction date: 2 weeks.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 3C (bottom) and 3C to 4C (top).
-Chest freezer was at -18C.
-Temperatures are checked and recorded daily.
-2-compartment sink prepared with 200ppm bleach at the time of inspection.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff member observed properly changing gloves after performing different duties.
-Bleach sanitizer pails were properly labelled and tested at 100ppm to 200ppm.
-Deli slicer was properly disassembled for cleaning and sanitizing and was found to be in good condition.
-Foods properly stored off the floor and covered.
-Washroom properly supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Staff member FoodSafe Level 1 certified. Course successfully completed in 2010. FoodSafe Level 1 certificates issued prior to July 29, 2013 expire on July 29, 2018. To recertify, students must either successfully complete a FoodSafe Level 1 course or on-line refresher course (foodsafe.ca).
