Observation: Note: The following are all repeated violations.
1. Multiple containers and bowls of food in the cooking area prep cooler and side prep cooler were not stored covered/ protected.
2. Raw eggs still stored above fresh produce in the walk-in cooler.
3. Missing light shields/ covers still noted in the cooking area and by the dishmachine. As per operator, new shield is on order and will arrive on July 17, 2022.
4. Take-out containers (faced-up) still noted stored below the single-use paper towel by the dishmachine handwash station.
Corrective Action(s): 1. Correction order issued for this violation - Protect all food in the cooking area prep cooker and side prep cooler with a plastic wrap or cover to prevent potential cross-contamination of food.
2. Correction order issued for this violation - Re-arrange the raw eggs so they are stored below fresh produce in the walk-in cooler. All raw proteins and raw eggs must be stored below or away from produce, cooked/ ready-to-eat food.
3. Install light shields/ covers over the exposed light bulbs as soon as they arrive.
4. **Issue corrected during the inspection** Take-out containers were stored upside down to avoid potential contamination.
