Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food such as diced vegetables, raw chicken kebab were stored in prep cooler at a temperature of 7C. The food was moved to this cooler after store opening and was found stored above 4C for less than 2hours. Staff stated that until the cooler is repaired, they will be time tracking the food. Time labels were posted on inserts and staff is aware to discard cold potentially hazardous food every 4 hours if not used. Staff stated that they will be storing only small portions of food in these inserts.
Corrective Action(s): Do not store food above 4C for more than 4 hours. After 4 hours, cold potentially hazardous food MUST BE DISCARDED.

Observation: *REPEATED VIOLATION* 1. Prep cooler was recorded an ambient temperature of 7C.
2. Walk in cooler was not working at the time of inspection.
Corrective Action(s): Repair/service the coolers and ensure that the ambient temperature is maintained at or below 4C. Do not store any cold potentially hazardous food in these coolers until they have been repaired.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler was not working. Staff was aware of it and using the cooler as dry storage area. No potentially hazardous food was stored in it.
- Walk in cooler on the store side is being used for storing potentially hazardous food. Temperature was recorded at 4.2C.
- Prep cooler in the kitchen area was recorded at 7C.
See violation above.
- Freezer on store side at -17C.
- Cooked rice hot held at 68C.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- 50ppm chlorine residual recorded during rinse cycle of low temp mechanical dishwasher.
- 3 compartment dishwashing sink available.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.

NOTE - Maintain the temperature logs for all the coolers and check temperature at least twice a day.
