Observation (CORRECTED DURING INSPECTION): Pizza in the hot holding unit was measured with an internal temperature of 52C. The temperature dial was observed to be at 60 mark.
Corrective Action(s): Staff reheated the pizza to 74C and increase the dial mark to 72. Ensure hot food is hot held above 60C or above.
