-Sushi coolers were at 4C (3 units).
-Kitchen upright coolers (2 units) were at 4C.
-Service area counter top cooler was at 4C.
-Bar freezer in the sushi area was at -14C.
-Chest freezers in the back area (3 units) ranged from -19C to -24C.
-Hot holding was greater than 60C. Miso soup was cooked to greater than 74C prior to hot holding.
-Chicken cooked the previous night was rapidly cooled and was at 4C.
-Sushi rice had a pH of 4.0.
-High temperature dishwasher had a final rinse of 71C on the dish surface on multiple cycles (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails properly labelled and tested at 100ppm.
-Spiralizer was soaking in the 2-compartment sink at the time of inspection for cleaning and sanitizing.
-Sushi prep area sanitized after each order.
-Ice machine was found to be clean and sanitary. Scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from contamination. Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 19, 2027.
