Observation (CORRECTED DURING INSPECTION):
Spray bottles storing Quats sanitizer was less 0ppm. Quats sanitizer strength shall be 200ppm in order to kill bacteria on surfaces.
Corrective Action(s):
Empty out all spray bottles and refill with new solution from the dispenser. This shall be done at the end of each day, and new sanitizer solution shall be used in the morning as the strength degrades throughout the day. Staff completed this and the Quats sanitizer strength was 200ppm in the spray bottles.

Observation:
Food stains and accumulated food debris found on walls, equipment, table legs, food containers, racks in dry storage room, and undersides of tables. These areas will attract pests and provide a source of foood.
Corrective Action(s):
Clean these areas with soap and hot water, and ensure they are being done on a routine basis.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) High temperature dishwasher had a rinse cycle temperature of 65C at the plate's surface as per max/min cycle. The temperature during the rinse cycle at the plate's surface shall be 71C or hotter, or 82C at the manifold.
2) The main assembly cooler was running at 6C and water is constantly leaking from the unit. All foods must be stored at 4C to prevent bacteria from growing. Pooling water will attract pests and provide a source of water for them to drink.
Corrective Action(s):
1) Immediately stop using the dishwasher and only serve food in single use or disposable dishware. Repair the dishwasher so the rinse cycle is above 71C at the plate's surface, replace broken temperature and pressure gauges on the dishwasher, and calibrate the new gauges.
During the inspection, staff called the repair company and started using disposable/take-out dishware. A follow-up inspection to occur tomorrow to check the dishwasher.

2) Immediately lower the temperature of the cooler to 4C, and call a repair company to stop the unit from leaking.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -18C or colder; hot holding units were above 60C; and thermometers present.
- Glasswasher at bar had [Cl2] of 50ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is satisfactory. Improvement needed in mentioned areas.
- Food storage practices done correctly. Foods stored in food grade containers; covered; in groups with raw proteins below RTE foods; labeled and date coded.
- Food handling practices done correctly. Utensils used to handle foods, and cookware (mixing bowls) & utensils (tongs & spatulas) washed every 2 hours.
- No signs of pests.
- No expired foods in use. FIFO rules followed.
- FoodSafe certified staff present.
A follow-up inspection to occur tomorrow at 10:30am to check the dishwasher.
