304 - Premises not free of pests [s. 26(a)]
Observation:
Found mice droppings on shelves and cupboards in the kitchen, behind the dishwasher, and in the "office" room.
Corrective Action(s):
The following actions must be taken:
- Clean up all the mice droppings and sanitize all surfaces with bleach and water.
- Hire a pest control company to eliminate the mice problem using non-chemical means. Have the pest control company inspect the premises and determine entry points.
- Place all items on shelves off the floor.
- De-clutter the premises, remove/throw away items that are not related to running the premises on a daily basis.
- Clean the exterior surfaces of all food containers and equipment every night. No food spills, stains or food shall be left uncovered at the end of the day.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
There are holes along the tile baseboards in the hallway by the customer washrooms, these holes could allow mice in. There is accumulated items behind the walk-in-freezer and in the storage room by the back door (by the customer washrooms). These conditions will allow mice in and will encourage mice to harbor in the premises.
Corrective Action(s):
Block all holes and openings with metal mesh (1/4" of smaller) or tightly stuff/pack steel wool into the holes and openings to prevent mice entering. Remove all times that do not need to be in the premises. There shall be no items stored on the floor.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The exhaust canopy filters have accumulated grease and dust. The grease will attract mice and the dust could fall into food.
2) There is accumulated dust on the uppers walls in the kitchen and on the light fixtures. The dust could fall into food.
Corrective Action(s):
1) Clean the filters and other accessible surfaces of the exhaust canopy to remove the greaes and dust. Ensure thisis done on a regular basis, in-between the professional cleaners.

2) Wash the walls and light fixtures to remove the dust. Ensure this is done on a regular schedule.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
1) Aluminum foil is being used to cover walls, trays and surfaces and not changed every day. Food debris will accumulate on the foil and it will attract pests.
2) Cookware (handle of wok) and plastic food containers were found to have duct tape on them as they were broken or cracked. Duct tape is not food grade, durable, or cleanable. Pieces of plastic could break off and fall into food.
Corrective Action(s):
1) The aluminum foil must be removed at the end of each day, and new installed in the morning. If you do not wish to do this, then you are not able to use aluminum foil to cover surfaces.
2) Throw away all damaged, cracked or broken food containers, lids, and/or cookware. Purchase new items.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had rinse cycle of 79.5C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth towels had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labeled; foods stored in groups with raw seafood on lowest shelf; and foods stored 6" off the floor on shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation is okay. Improvement needed in the mentioned areas.
- FoodSafe certified staff present.
- Batches of soup, coleslaw and tartar sauce made. Batchers of oup, tartar & coleslaw sauce made every 2-3 days, coleslaw (cabbage & carrot) made daily.
- COVID-19 measures in place: masks worn by staff and patrons; PoV checked; signs posted on doors; and hand sanitizer available.
- Discussed inspection results with the supervisor (owner's sister), no signature obtained due to the pandemic.
