Corrective Action(s): Clean and sanitize the lids and covers, remove any items that are no longer in use, declutter the area to prevent harbouring pests such as rodents.

Observation: Cleaning is required in the following areas:
> Cook line: oil accumulation and food debris noted under cooking equipment, especially deep fryers.
> Vent hood: oil dripping from baffles. Right side vent hood that is above the convection oven appears rusty.
> Dishpit: utensils fallen behind 2 compartment sink.
> Dry storage room: rodent droppings noted on all 3 shelving units and on the floor behind the fire extinguisher.
Corrective Action(s): Clean and sanitize above mentioned areas as per your sanitation plan. Remove rodent droppings from dry storage room by taking down all items stored on the shelves, wipe up droppings, followed by bleach solution to sanitize.

Note: flooring under 1 leg of the ice machine has split and is rusting. This has been brought to the attention of staff on site. All surfaces in the kitchen must be smooth and non-porous to facilitate cleaning and sanitizing. This area should be repaired or covered with non-slip material.
