Observation (CORRECTED DURING INSPECTION): The glasswasher had 0 ppm Iodine when tested. The Iodine container underneath the glasswasher was empty at the start of the inspection.

Comments

-Ensure that the glasswasher's Iodine sanitizer level is checked daily. It should be tested at between 12.5 to 25 ppm.
-Purchase a timer for the oshi sushi that is kept at room temperature within one week.
-Iodine test strips have expired in July, 2022. Purchase new test strips with a valid expiry date within one week.

Front of house:

All coolers were < 4C
Hand sinks were supplied with hot and cold water, soap and paper towels.
Sanitizer spray bottles had 200 ppm Quats.

Kitchen:

The dishwasher reached 74 C (minimum 71 C) at the plate level. Check daily
All coolers, including the walk-in cooler were < 4 C
All freezers, including the walk-in freezer, were < -18 C
The Quats sanitizer dispenser at the 2-compartment sink was was tested at 200 ppm.
No evidence of pests.
The ice machine is cleaned daily.
Hand sinks were supplied with hot and cold water, soap and paper towels.
General sanitation was satisfactory.
