Comments

- Handwash stations in place and well stocked with liquid soap and paper towels.
- 3 comp sink and manual dishwashing in place. Bleach sanitizer noted in sink at 100 to 200 ppm.
- Staff flow in and out of facility well organized - food flows also good.
- Pest control in-house.
**Note: Use of pesticides would require licensed Pest Control technician.
- Sanitizer spray bottles located in several areas of production. Measured at 200 ppm. Bottles well labelled.
- Cooler less than 4 C and freezer below -18 C.
**Noted minor build-up of food residue at inner entry point of freezer. Recommend scrape and remove on regular basis in-between yearly cleaning shutdown.

General sanitation and overall organization is good.
**Minor build-up of dust webs at ceiling exhausts and around cook line exhaust system. Recommend inclusion into sanitation plan to avoid such accumulations.
