Observation (CORRECTED DURING INSPECTION): Rodent droppings found in a container where single use utensils (e.g., spoons and forks) are stored. Single use utensils discarded at this time. Rodent droppings found directly touching paper bags. Paper bags to be discarded.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. (Repeated violation) Hand washing station near the dishwasher was blocked by a metal shelf. The plumbing was also blocked as water was not draining. Water was leaking from the pipe below. Single use paper towels were not available at this station.
2. (Repeated violation) Hand washing station next to the ramen station was being used for food preparation (a bucket of cooked meat being cooled down by running water). Food removed from this hand washing station.
Corrective Action(s): 1. Service the hand sink so that water drains without any leakage. Replenish single use paper towels.

Observation: Observed multiple foods in the dry storage that is damaged with rodent activities (gnaw marks and rodent droppings).
Corrective Action(s): All canned products to be washed and sanitized. All dry goods impacted by rodent activities to be discarded.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent activity noted throughout the facility. Observed rodent droppings in the kitchen on top of dry storage lids, on a food contact surfaces, on shelves, etc. Observed rodent droppings on the food packages, shelves and on the floor in the dry storage area. Large amount of nesting materials and gnawed materials near the hot water tank and freezer in the back area.
Corrective Action(s): Premises to be free of pests. Remove all rodent droppings. Clean and sanitize areas impacted by rodent activity with 100-200 ppm chlorine sanitizer. Foods covered with rodent droppings, unless they can be washed and sanitized (e.g., canned products), to be discarded. Clean and sanitize ALL food contact surfaces on the premise.

Observation: Large amount of grease and food build up noted behind the stove line. A pool of water observed under the ramen cooking station.

Routine inspection conducted. Closure order issued at this time due to severe pest activity.
All coolers measured at 4C or less.
Freezers at adequate temperature.
Hot holding (soup base and cooked rice) measured at 60C or higher.
Low temperature dishwasher's sanitizing cycle measured at 50 ppm chlorine as per test strips.
Food contact surface sanitizer was measured at 100-200 ppm chlorine as per test strips.
Update your Sanitation Plan to reflect your plans to keep the facility free of pest. Also, updated Sanitation Plan to include increased cleaning frequency for kitchen, especially behind the cook line. Also, include a maintenance plan in your Sanitation Plan which outlines specific work plans discussed and agreed with your pest control company on how to combat rodent activities.
