Premise is sanitary. No signs of pests at the time of inspection. Hot and cold water available. Hand sink in use with liquid soap, paper towels and running water. Food protected from contamination with food grade covers and lids. Utensils, condiments and single use items are sanitary. Take out sushi only. 200 ppm quat sanitizer in use. 3 compartment sink in use. Chemical storage adequate. Temperature monitoring units in use with daily logs available. Chemical sanitizer test strips in use. Equipment in good working order. Permit posted in visible location. Holding units: Display cooler sushi at 1.6C, 2 counter coolers at 1.8C and below diced carrots and meats. Covid safety plan in use and available for review. 1.
