Routine:
-Handsink supplied with liquid soap and paper towel
-Dishwasher functioning. 50 ppm chlorine residual detected after rinse cycle.
-Walk-in cooler was at 3 C.
-Chest freezer was at -14 C
-Upright freezer was at -18 C
-Samosa hot holding: 63 C
-Display cooler: 3 C
-No hot holding in steam bath during inspection
-Wiping cloths were in bleach sanitizer (100ppm).
*Ensure all sanitizer solution is replenished every 4 hours in buckets and every 3 days in spray bottles (1 tsp bleach per 1 L water = 100 ppm chlorine)
-No signs of pest infestation noted at the time of the inspection. Pest Control contract in place with monthly service
-Commercial ventilation hood recently cleaned - excellent
-Food is protected - cover all food after cooling
-General sanitation of the premises was excellent
