Dishwasher left overnight as requested. An air gap had developed between entry point of machine, and where tube enters protective metal casing.
After 2nd run, a 50-100ppm chlorine residual was detected.
Staff are to follow the monitoring logs implemented, meaning 3x daily checks are required.
Sauces and dressings are now to be stored in bottom portion of prep cooler
New logs to be implemented TODAY to record each batch of precooked wings. They are to reach 185F as per your food safety plans.
Your next routine inspection will go over all of the above discussed points in detail. Ensure ALL staff know what is required of them to keep your food products safe.

**Please get a backup container of chlorine test strips as 3 strips daily will quickly run out.
