Observation (CORRECTED DURING INSPECTION): Dishes being run through the dishwasher were not being properly sanitized, as the final rinse temperature at the plate surface level was not reaching a minimum of 71C.
Corrective Action(s): Staff resanitized all dishes in 200 ppm Quat sanitizer solution at time of inspection. Until the dishwasher is able to reach 71C during the rinse cycle at the plate surface level, all dishes put through the dishwaher must be sanitized manually in the 3-compartment sink using 200 ppm quat sanitizer solution.

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 3-compartment sink and in sanitizer buckets 200 ppm.
- Walk-in cooler and upright cooler were measured to be at or below 4C
- Walk-in freezer was measured to be less than -18C
- Hot holding units were measured to be above 60C
- Temperature records well maintained
- Food storage practices excellent
- Dry storage area organzied
- No signs of pest activity noted at time of inspection
- General sanitation is excellent
