Code 205 noted on Routine inspection # CTIN-BD8V7U of Jun-17-2019 Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] Observation: Products such as kimchi and kombocha were stored at 6-7C. Air curtains not used and wooden boards used to line racks in the cooler. Correction: Please adjust temperature and remove the wooden boards. Use air curtains as necessary. Ensure foods are kept at 4C or colder. Relocate products that require refrigeration to working coolers if temperatures do not drop to 4C in an hour.

Comments

Wooden board lining has been removed from kimchi cooler which is now reading 3C. Display thermometers added to these refrigeration units. No sprouts available at the time but staff understands that it needs to be stored in close lid container with tongs outside. Ice machine cleaned. Lighting in the back replaced. Walk-in cooler remain closed (2C). Floor cleaning in vegetable prep area has improved but reminder that flooring in this area to be done more regularly. Dish detergent available for warewashing. Separate handsoap available as well. Discussed that if reusable wiping clothes were used, it needs to be soaked in 100ppm bleach sanitizer (1 tsp bleach to 1 litre water) as per spray bottle. Note: staff shall be relocating kombucha products to alternate cooler as display cooler without use of air curtains is reading 6-8C.
