Observation (CORRECTED DURING INSPECTION): Surface sanitizer in spray bottle measured at 0ppm chlorine bleach concentration at the time of the inspection. The operator prepared new sanitizer at 100ppm chlorine bleach concentration.
Corrective Action(s): Ensure to label all sanitizer spray bottles and sanitizer is measured at 100ppm chlorine bleach at all times.

Comments

- General sanitation is satisfactory.
- All handwashing stations (kitchen, bar) supplied with hot/cold running water, soap, and paper towels.
- Low temperature dishwasher dispensed 100ppm chlorine solution. Chlorine test strips available.
- Two compartment sink (kitchen) available for manual dishwashing.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 15cm off the floor to facilitate cleaning.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers: < or = 4C.
- All freezers: < or = -18C
- All hotholding units (rice warmers, miso soup) > or = 60C
- Daily temperature log must be kept up to date.
Note: Do not overfill the insert containers at the prep cooler due to the potential for temperature abuse.
