Ensure temperature, dishwasher & sanitizer logs are maintained daily - last records were from January.
Ensure cleaning logs are dated
Cleaning under equipment was satisfactory - except around wheels, pay extra attention here
Cleaning required inside some prep coolers
Organize walk-in cooler - all items are to be stored 6" off the floor.

Front of house area
- Ice cream freezer requires cleaning - ensure dropped scoops of ice cream are cleaned up as you go
- Dipper well must be fully turned on to ensure proper flow of water
- Cleaning required at cooler fan cover in 2-door sliding cooler
- Ensure wiping cloths are stored in sanitizer (i.e. Quats), not soapy water.
