Met with Brian, General Manager on site, and we discussed the following:

- at least one person per shift has a FS lev 1 certificate
- keep your daily temperature logs up to date
- high temp dishwasher - reached 71C at the plate surface
- bleach used as approved sanitizer at 100ppm
- glass washer is not running at the time of inspection/ pub is not open yet but observed chlorine bottle as sanitizer for glass low temp washer
- walk in cooler - food is stored off the floor/ temp at below 4C/ all food is covered and protected during storage
- orkane is a certified pest control
