Observation: - Large dough equipment (mixers, dividers) require thorough cleaning and sanitizing. Old bits of dough and flour accumulation observed on and in parts of machines.
- Previously cleaned and sanitized utensils were stored in a dirty container.
Corrective Action(s): - Food contact surfaces of dough machines must be thoroughly cleaned and sanitized after each use.
- Clean equipment/utensils must be stored in clean receptacles.

Observation: Rodent droppings observed in the following areas:
- On floor in baking area between shelves of bread proofing cabinets and behind ovens
- In flour storage areas on packaged bags of flour
Corrective Action(s): - Dispose of rodent droppings.
- Clean and sanitize outer packaging material (shrink wrap) of flour bags with sanitizer (bleach) solution. Go through product and discard any bags that have been chewed through (none observed at time of inspection).
- Clean and sanitize the stored shelves of bread proofing cabinets with sanitizer (bleach) solution.
- Sanitize floors with bleach solution.
- Contact a professional pest control company for servicing. Set up a contract for bi-weekly pest control services. Retain a copy of the contract for health inspector to review, and keep all copies of pest control invoices/reports onsite.

Observation: Hole in weather stripping/door sweep under one bay door. Operator has temporarily sealed the hole with steel wool.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach available onsite for sanitizing. Ensure to mix 1 oz of bleach to each gallon of water for proper concentrations.
- Three-compartment sink area maintained in sanitary condition
- Walk-in cooler measured to be at 3C
- Walk-in freezer measured to be at -21C
- Ensure couche cloths are replaced as needed

**A follow-up inspection is scheduled for February 27, 2019.
- Ensure a pest control contract has been signed and pest control services have been provided.
- Ensure any possible pest entry points have been sealed.
- Ensure a thorough deep cleaning of all production equipment has been completed, including bases of dough machines.
