Observation (CORRECTED DURING INSPECTION): Wiping rags left on counter tops.

Sanitizer containers with 0 ppm Quaternary Ammonia.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Sanitizer containers are to be change frequently to maintain adequate sanitizer residual. (every 2 hours)

Multiple expired products within walk-in cooler: peeled garlic, ceasar salad dressing, orange juice, mustard, pepper paste, soybean paste

Fresh produce stored in open packaging on low rise shelves contaminated with rodent feces.

Corrective Action(s): Relocate food equipment to food preparation areas of the kitchen, do not process food at office station.

Expired food product discarded. Food inventory is to be actively monitored for shelf life and food that has past it's shelf life is to be removed from inventory and discarded.

Pest proof storage containers to be obtained to store and protect fresh produce items.

Observation: Pest control report indicates cleaning and pest proofing actions requiring attention since December 29, 2021.
Corrective Action(s): Action items identified by pest control service are to be corrected prior to subsequent inspections.

Pest control service to be retained to conduct a pest proofing audit of premise to identify and correct potential rodent entry points.

Observation: Mouse droppings observed in the following locations: on floor around perimeter of dishwashing area, dry storage receiving hallway, on shelves used for storage of vegetables, in corners of laundry room, under shelving of small food prep station, in corners of office work station, staff washroom corridor, under pop syrup shelving, along walls of both cooking lines, on lower shelves below kitchen food preparation counters, on floor and throughout all cabinets of dessert station, in corners of back dining room where spare chairs are stored, shelves of table cleaning cart by dessert bar, and throughout storage cabinets below small and large buffet displays.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
