Observation (CORRECTED DURING INSPECTION): Meat in prep insets at 5.2C ambient air temperature range between 4-5C.
Corrective Action(s): Operator stated meeat only in prep cooler for approx 1 hr. Relocated to another cooler during inspection. Repair/adjust cooler so amibent temperture below 4C can be monitored.

Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer 400+ppm. Wiping cloths was with hot water and kept on counters.
Corrective Action(s): Ensure chlorine sanitizer~ 100ppm obtain test strips to verify concentration. Wiping cloths should always be in sanitizer solution provided education Re: how to make bleach & water solution.

2)Food/Vegetable in walkin cooler stored in foam containers that are starting to mold.
Corrective Action(s): 1)Clean ice machine as per manufactures instructions.
2)Always store vegetable and food in food grade containers correct immediately.

Observation (CORRECTED DURING INSPECTION): Back door kept open during time of inspection.
Corrective Action(s): Ensure back door remains closed when not in use. Leaving open can allow for entrance of pests.

Observation: Overall sanitation needs improvement.
Corrective Action(s): Thoroughly clean premises, including hard to reach areas, underneath/behind equipment, walkin cooler, and dishwasher. Date to be corrected by 2 weeks.

Observation: No chlorine detected in final rinse cycle of dishwasher.
Corrective Action(s): Service/repair dishwasher so sanitizer is dispensed. Obtain test strips to verify so ppm chlorine detected. DO NOT USE DISHWASHER until it has been serviced. Use 3 compartment sink. Hand out provided for proper manual dishwashing. Date to be corrected by 1 week.

Pest control contract with licensed company in place.
Ensure to maintain temperature logs and have available for review.
