Observation:
There floor under the boxes of pop syrup, in the back area, has accumulated syrup and/or is permanently stained. This will attract pests.
Corrective Action(s):
Scrub and clean the floor on a daily basis to remove the spilt syrup, or replace the flooring under this area with new floor tiles.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) Exposed cement floor found in the walk-in-cooler due to missing floor tiles. There are also a number of cracked, chipped or permanently stained floor tiles throughout the premises. These dirty or damaged floor areas are not sealed, smooth, or cleanable. This will attract pests.
2) One of the door gaskets/seals has fallen off one of the display doors (Red Bull drinks) of the walk-in-cooler. Cold air is escaping and the door is not in good repair.
3) The wall and floor around the sink unit, beside the slurpee machines, is open and not cleanable.
Corrective Action(s):
1) Repair or replace all damaged or permanently stained floor tiles with new ones, so the floor is durable, smooth, sealed, level, and cleanable.

2) Replace the damaged door gasket so that the door can close tightly and keep the cold air in.

3) Repair the floor and wall around the sink unit so that it is sealed, durable, smooth, sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -23C or colder; hot holding units 60C or hotter; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles was 200ppm.
- All foods stored in food grade containers; covered with lids; labeled; date coded; in groups; and 6" off the floor on shelve, racks or platforms to facilitate cleaning of the floor.
- General sanitation level has greatly improved. No signs of pests.
- FoodSafe certified staff present.
- Staff use utensils to handle food, or use disposable gloves to complete a task and then discard them.
- No expired foods for sale or in use. Stocked rotated and FIFO rules followed.
- Minor renovations occurred to front retail area (relocation of coffee bar, retail shelves, and extension of central POS area. The walls in the back area still have chipped paint, dents, and food stains. Repair and repaint the damaged wall areas to the walls are smooth, level, durable, sealed, and cleanable.

** A new mop sink has been installed in the back area. It is recommended that mop sinks are at a level that minimizes staff having to lift heavy buckets of mop water, to prevent back injuries.**
