304 - Premises not free of pests [s. 26(a)]
Observation: Significant numbers of rodent droppings observed in the following areas:
1) Behind the dry storage bins inside the dry storage room, along the walls
2) In the second kitchen, along the edges of the walls underneath the prep tables. Droppings noted underneath and behind the refrigerator
3) Significant droppings observed inside of the garage area (all along the edges of the garage, at the front corners of the garage, and on some of the boxes (wrapped with several layers of plastic wrap).
Corrective Action(s): All rodent droppings to be removed with 1 part bleach, 9 parts water. Flour / chickpea / dry goods shall be removed from the garage until the area is thoroughly cleaned and disinfected. Continue to identify for any new holes that may lead to rodent entry and reinforce / seal.

Observation (CORRECTED DURING INSPECTION): 1. Tall grass / bushes observed to the right of the garage.
2. Hole noted in dry storage room inside auxiliary kitchen.
Corrective Action(s): 1. Remove all unnecessary items outside of Prabu sweets and trim the grass / bushes to the right of the garage.
2. Seal the hole and reinforce with steel wool or equivalent. Continue to identify any new sources of rodent entry and work with with your pest control company.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Additional cleaning to occur on shelving of walk-in coolers.
Corrective Action(s): Thoroughly wipe and sanitize shelving inside the walk-in coolers. Ensure that you keep shelving in good santiary condition at all times.

Comments

Routine inspection conducted of a sweet shop. Rodent activity continues to be high in the building, and must be promptly addressed. The following observations were made:

1. Temperatures
- Front stand-up freezer at -12C
- Prep cooler up front at 4-5C (NOTE: Please close the cooler at all times when not in use)
- Gulab jamun hot-holder at 67C
- Main kitchen walk-in cooler at 1C
- Auxiliary kitchen walk-in cooler at 1C
- Auxiliary kitchen stand-up freezers at -18C or below
- Temperature logs maintained and up-to-date for September 2019

2. Hygiene and Sanitizing
- Hand wash station by the door and at the front-of-house is adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail inside the kitchen and in the auxiliary kitchen contains approximately 200 ppm chlorine residual (in main kitchen)
- High-temperature dishwasher sanitizes at final rinse temperature of 73 at the plate/tray (NOTE: Multiple attempts required - ensure that the rinse temperature is at 180F at the manifold before using)
- Knives used in facility are stored in sanitary condition on the magnetic knife holder

3. Storage
- Chemical products stored separately from food products
- Food products are covered inside containers with secure lids. Stainless steel containers are power washed and sanitized after use

4. Pest Control
- Professional pest control company sets and removes traps, and provides recommendations to facility. Last inspection conducted today (September 25, 2019) - 7 mice removed from traps throughout facility
- Please continue to forward all professional pest control reports to the Environmental Health Officer

5. Administrative
- Head chef has FoodSafe 1 (May 29, 2023)
