Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer was measured at 50 ppm in labeled spray bottle in back area. Sanitizer was measured at 400 ppm quats or greater at three compartment sink and in labeled spray bottle at front. Sanitizer product label states that product is to be diluted at 2 mL per litre of water (195 ppm active quats) for a no-rinse sanitizer. Note: Sanitizer was also tested with test strips on site. Sanitizer was recorded at 200 ppm in sanitizer logs.
Corrective Action(s): Sanitizer was prepared at 200 ppm quats at time of inspection (in bottles and at rear sink). Test strips available on site are within expiry. Please ensure sanitizer concentration is maintained at 200 ppm quats for proper sanitizing. Please ensure directions are followed for use of test strips (e.g. immerse for 10 seconds).

- Freezers at -18 degrees C or less
- Hot holding internal temperatures at 60 degrees C or more
- NSF probe thermometers available for internal temperature checks. 70% isopropyl alcohol wipes available.
- Temperature logs available and up to date. Internal cooking temperatures are recorded at 74 degrees C (165 degrees F) or greater.
- Hand washing sinks (front and back) supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Three sink plugs available at three compartment sink
- Hair nets, non-latex gloves, and aprons are available and in use
- No evidence of pest activity observed at time of inspection
- Permit is posted in a conspicuous location
