Observation: Walk in cooler at 7.7C at coldest when probed between two cartons of milk. Line cooler measured 9.4C ambient air. Chef stated that a repair person came in yesterday (July 28th - more than one week after last inspection) to look at walk in cooler but is unsure of the outcome of the visit at they did not speak to him after they left. Ambient air temperature in kitchen ranged between 33C-38C and likely adding to coolers' challenges in keeping the required 4C or less.
Corrective Action(s): 1) Move all items from line cooler requiring refrigeration for food safety (cut fruits/vegetables, meats, dairy, etc) to a working cooler and do not use this cooler for storage of foods beyond 2 hours.
2) Have line cooler repaired/adjusted so that it can maintain 4C or less at all times.
3) Email the repair person's report regarding the walk-in cooler or provide an update on the walk in cooler to the undersigned EHO by Tuesday Aug 2, 2022
4) Have curtain installed in walk in cooler door by Aug 5, 2022.
