Observation (CORRECTED DURING INSPECTION): Small countertop domestic dishwasher has been brought in. This domestic dishwasher does not have a sani-cycle and is not NSF approved and can therefore not be used for sanitizing dishes and utensils. Note: all containers, mugs, and utensils for customers are single service (disposable) only.
Corrective Action(s): Manually sanitize all scoops, utensils, blenders, etc. Follow the 4 step method: 1. Wash with dishsoap and warm water / scrub with a designated brush. 2. Rinse with clear water. 3. Sanitize using 1 tsp of domestic bleach in 1 litre of water (100-200ppm). Soak for 2 minutes. 4. Air dry. Scoops stored in water: change cold water every 30 minutes if not using cold running water. Wash, rinse, sanitize, and air dry all equipment and utensils every 2 - 4 hours or after each use (if used infrequently).

Quats sanitizer (200ppm) is used to sanitize the gelato equipment. Follow manufacturer's directions regarding procedures and chemical use.
Fridge is at 4 C or colder.
Milk/cream is pasteurized and from a licensed dairy. No raw eggs in gelato made on site.
Freezers - ok.
Do not store food equipment in the staff washroom.
