Observation (CORRECTED DURING INSPECTION): Automatic dispenser at double sink is dispensing quats sanitizer at 200ppm. The spray bottle contains 0ppm quats sanitizer and the wiping cloth sanitizing solution is weak - 0-10 ppm quats. The dispenser in the closet - label shows detergent not quats.
Corrective Action(s): Use the quats dispenser to dispenser 200ppm quats sanitizer for the spray bottle and for sanitizing wiping cloths.

Observation: There is a hand sink and a two compartment pot sink along with the commercial dishwasher. Produce is washed early in morning using a clean bowl. During inspection, two compartment sink was full of dishes.
Corrective Action(s): Based on the volume of food and use of the kitchen, an additional sink is required for food preparation. Provide plans by March 21, 2020. Obtain all other required approvals.

Observation: Dust is on pipes. Floor requires cleaning/resurfacing? Wooden shelf by baker's table is unfinished wood. Ceiling of ice machine requires cleaning.
Corrective Action(s): Wooden surfaces and floor must be clean and impervious to moisture to facilitate cleaning. Clean pipes along the ceiling to remove dust. Clean and sanitize ice machine. Update your routine cleaning schedule.

Observation: Operator's Food Safe Level 1 certificate is more than 5 years old (expired). Staff on site have Food Safe. Keep copies available.

Coolers - satisfactory (prep cooler air temperature 5.3 C but food temperature is at 4 C).
Freezer - discussed - ok.
Liquid pasteurized eggs are used where eggs may not be fully cooked.
Hand sink has liquid soap and paper towels. Water temperature is at about 38 C - ok for hand washing.
Dishwasher final sanitizing rinse is satisfactory (>82 C at gauge and >71 C measured inside of the machine).
