Premise is very clean and sanitary. Commercial dishwasher has been replaced with a new commercial low temp dishwasher. OK. 100 ppm chlorine detected at plate level. All fridges <4 Celsius. Hand sink is stocked and working. Good handwashing observed. No sign of pests. Food safety plan discussed. Posted procedures look OK. Further documentation of internal cooking temperatures required.
